- 400 g Sweet Corn Kernels
- - Baby Tomatoes
- 200 ml Coconut Milk
- 20 g Turmeric Powder
- - Coriander Powder
- 100 g Jeera
- - Red Chilli
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Heat vegetable oil in a pan and add cumin seeds, letting them splutter for a few seconds.
- 2. Add finely chopped onions and sauté until golden brown, stirring occasionally.
- 3. Add minced garlic, cook until fragrant, then add chopped tomatoes and cook until softened.
- 4. Stir in turmeric, coriander, and chili powder, and sauté for one minute to blend the spices.
- 5. Add the sweet corn kernels and mix well, ensuring they are coated with the spices.
- 6. Pour coconut milk and a little water into the pan, stirring to create a creamy curry base.
- 7. Bring the mixture to a simmer and allow it to cook for 5 minutes, stirring occasionally.
- 8. Add fresh spinach leaves, stirring until they wilt into the curry.
- 9. Season with salt and cook for another 3-4 minutes, ensuring all flavors meld together.
- 10. Turn off the heat and let the curry rest for 2 minutes before serving.
