Ingredients

  • - Rice Flour
  • 500 g Urad Dal
  • 250 g Spinach
  • 200 g Paneer
  • 1 piece Coconut
  • 250g Green Chilli
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Yellow Mustard Seeds
  • 200 ml Mustard Oil
  • 100 g Salt
  • 1pc Watermelon

Instructions

  1. 1. Soak rice flour and urad dal in water for 4 hours, then grind to a smooth batter.
  2. 2. Blanch the spinach in hot water for 2 minutes, then chop it finely.
  3. 3. Crumble the paneer and mix with the chopped spinach, green chilies, and salt.
  4. 4. Heat oil in a pan, add mustard seeds, curry leaves, and sauté briefly.
  5. 5. Add the paneer-spinach mixture to the pan and cook for 5 minutes, stirring well.
  6. 6. Heat a dosa pan and spread a ladleful of batter thinly to form a dosa.
  7. 7. Cook the dosa on one side until crisp, then add the paneer-spinach filling in the center.
  8. 8. Fold the dosa over the filling and press gently to seal it.
  9. 9. For the chutney, grind fresh coconut, coriander leaves, green chilies, and salt with a little water.
  10. 10. Serve the dosas hot with the coconut chutney for a balanced breakfast.
