Ingredients
- 400G Chtoura Dark Red Kidney Beans
- 1 piece Yellow Bell Pepper
- 500 g Onion
- - Baby Tomatoes
- 100 g Garlic
- loose Ginger
- 50 g Cumin Powder
- - Red Chilli
- 20 g Turmeric Powder
- 45 g Garam Masala
- 200 ml Mustard Oil
- - Coriander Powder
- 100 g Salt
Instructions
- 1. Soak and boil the rajma until soft, then drain and set aside.
- 2. Wash the bell peppers, slice off the tops, and remove the seeds inside.
- 3. Finely chop onion, tomatoes, garlic, and ginger for the stuffing.
- 4. Heat oil in a pan and sauté the chopped onion until translucent.
- 5. Add garlic and ginger, cooking until aromatic, then stir in tomatoes.
- 6. Mix in cumin, coriander, red chili, turmeric, and garam masala powders.
- 7. Add the cooked rajma to the pan and mash slightly while mixing with spices.
- 8. Adjust salt and garnish the mixture with fresh coriander leaves.
- 9. Stuff the prepared bell peppers tightly with the rajma filling.
- 10. Preheat the oven to 180°C and place stuffed peppers on a baking tray.
- 11. Bake for 20 minutes or until the peppers are tender and slightly charred.
- 12. Let the peppers cool slightly and serve warm with a fresh salad.
