This hearty upma combines protein-rich lentils with the creamy sweetness of pumpkin, infused with aromatic Indian spices for a wholesome start.
Ingredients
- 400-600 g Pumpkin
- 500G Freshos Couscous Semolina
- - Coconut Oil
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- 250g Green Chilli
- 20 g Turmeric Powder
- 100 g Salt
- 1pc Watermelon
- 100 g Coriander Leaves
Instructions
- 1. Dice the pumpkin into small cubes and set aside.
- 2. Dry roast the semolina in a pan until aromatic and lightly golden, then keep aside.
- 3. Heat coconut oil in a pan, add mustard seeds, curry leaves, and chopped green chilies, and sauté for 1 minute.
- 4. Add the diced pumpkin and split green gram to the pan, stir well, and cook for 5 minutes.
- 5. Add turmeric powder and salt, then pour in the water and bring to a boil.
- 6. Slowly add the roasted semolina to the boiling mixture while stirring continuously to avoid lumps.
- 7. Lower the heat, cover the pan, and cook for 10 minutes until the semolina absorbs the water and the mixture thickens.
- 8. Turn off the heat, garnish with chopped coriander leaves, and let it rest for 2 minutes.
- 9. Serve warm with a side of coconut chutney or enjoy as is for a balanced breakfast.
