- 250 ml Lemon Juice Concentrate

Instructions
- 1. Heat olive oil in a skillet over medium heat and add minced garlic, stirring until fragrant.
- 2. Add sliced mushrooms to the skillet and cook for 5-7 minutes until golden and tender.
- 3. Add fresh spinach to the mushrooms and sauté for 2-3 minutes until wilted; season with salt and pepper.
- 4. In a small bowl, mix mustard, cashew cream, lemon juice, and a pinch of salt to create the spread.
- 5. Toast the multigrain bread slices until golden and slightly crisp.
