Ingredients

  • 200 ml Coconut Milk
  • 500 g Onion
  • 100 g Garlic
  • loose Ginger
  • 20 g Turmeric Powder
  • 100 g Jeera
  • - Coriander Powder
  • 1 liter Sunflower Oil
  • 100 g Salt
  • 50 g Black Pepper

Instructions

  1. 1. Wash and soak the rice in water for 20 minutes, then drain and set aside.
  2. 2. Heat sunflower oil in a pan and add cumin seeds, letting them sizzle for a few seconds.
  3. 3. Add finely chopped onion, garlic, and ginger to the pan and sauté until golden and fragrant.
  4. 4. Stir in turmeric powder, black pepper, and salt, mixing well for an even coating.
  5. 5. Add sliced mushrooms and spinach leaves to the pan, cooking until softened and combined.
  6. 6. Add the drained rice to the pan, stirring gently to mix with the vegetables and spices.
  7. 7. Pour in the coconut milk and 300 ml of water, bringing the mixture to a boil.
  8. 8. Reduce the heat to low, cover the pan, and let the rice cook for 15 minutes until the liquid is absorbed.
  9. 9. Preheat the oven to 180°C while the rice finishes cooking on the stove.
