- 200 ml Coconut Milk
- 500 g Onion
- 100 g Garlic
- loose Ginger
- 20 g Turmeric Powder
- 100 g Jeera
- - Coriander Powder
- 1 liter Sunflower Oil
- 100 g Salt
- 50 g Black Pepper
Instructions
- 1. Wash and soak the rice in water for 20 minutes, then drain and set aside.
- 2. Heat sunflower oil in a pan and add cumin seeds, letting them sizzle for a few seconds.
- 3. Add finely chopped onion, garlic, and ginger to the pan and sauté until golden and fragrant.
- 4. Stir in turmeric powder, black pepper, and salt, mixing well for an even coating.
- 5. Add sliced mushrooms and spinach leaves to the pan, cooking until softened and combined.
- 6. Add the drained rice to the pan, stirring gently to mix with the vegetables and spices.
- 7. Pour in the coconut milk and 300 ml of water, bringing the mixture to a boil.
- 8. Reduce the heat to low, cover the pan, and let the rice cook for 15 minutes until the liquid is absorbed.
- 9. Preheat the oven to 180°C while the rice finishes cooking on the stove.
- 10. Transfer the cooked rice mixture to a greased baking dish and spread it evenly.
- 11. Bake the dish in the preheated oven for 10 minutes to achieve a lightly crisp top layer.
- 12. Garnish the rice bake with freshly chopped coriander leaves before serving.
