Ingredients
- 500 g Moong Dal
- 1 Bunch Mint Leaves
- 250 ml Lemon Juice Concentrate
- 110 g Unpeeled Garlic Cloves
- - Rice Flour
- 250g Green Chilli
- - Coriander Powder
- - Cumin Seeds / Jeera Seeds-250 Gms
- 20 g Turmeric Powder
- 100 g Salt
- 1 kg Water Chestnuts
- 850 g Sundrop Heart+ Blended Cooking Oil
- 200 ml Coconut Milk
Instructions
- 1. Rinse the moong dal thoroughly and soak it in water for 3-4 hours.
- 2. Drain the soaked dal and blend it into a smooth batter with green chilies, coriander, turmeric, cumin, and water.
- 3. Add rice flour and salt to the batter, mixing well to achieve a semi-thick consistency.
- 4. Heat a non-stick pan and drizzle a small amount of oil to prevent sticking.
- 5. Pour a ladle of batter onto the pan and spread it out evenly to form a pancake.
- 6. Cook the pancake on medium heat until golden brown on one side, then flip and cook the other side.
- 7. Repeat the process for the remaining batter, adding oil as needed for each pancake.
- 8. To prepare the mint chutney, blend mint leaves, coconut milk, lemon juice, garlic, and a pinch of salt until smooth.
- 9. Transfer the chutney to a serving bowl and adjust seasoning if necessary.
- 10. Serve the moong dal pancakes hot with the refreshing mint chutney for dipping.
