Ingredients
- 1 kg Yellow Moong Dal
- - Rice Flour
- 250g Green Chilli
- loose Ginger
- 100 g Coriander Leaves
- 100 g Salt
- 1 piece Coconut
- 100 g Curry Leaves
- 100 g Yellow Mustard Seeds
- 250 ml Lemon Juice Concentrate
- 1pc Watermelon
Instructions
- 1. Soak the moong dal for 4-5 hours or overnight, then drain and rinse thoroughly.
- 2. Blend the soaked moong dal with green chilies, ginger, and water to create a smooth batter.
- 3. Add rice flour, salt, and chopped coriander leaves to the batter, mixing until evenly combined.
- 4. Heat a non-stick pan and lightly grease it with vegetable oil.
- 5. Pour a ladle of batter onto the pan and spread it gently to form a pancake shape.
- 6. Cook the pancake for 2-3 minutes on each side until golden brown and crisp.
- 7. For the chutney, blend grated coconut, curry leaves, mustard seeds, and lemon juice with a little water.
- 8. Heat a small pan with oil, crackle mustard seeds, and add the blended chutney mixture. Cook for a minute.
- 9. Serve the moong dal pancakes hot with the coconut chutney on the side.
