Crispy fritters made with moong dal and fresh spinach, spiced to perfection and paired with a tangy mint chutney.
Ingredients
- 250 g Spinach
- - Besan
- 500 g Onion
- 250g Green Chilli
- 100 g Jeera
- loose Ginger
- 100 g Salt
- 20 g Turmeric Powder
- - Red Chilli
- 200 ml Mustard Oil
- 100 g Coriander Leaves
- 250 ml Lemon Juice Concentrate
- 1pc Watermelon
Instructions
- 1. Rinse and soak the green moong dal for 4-6 hours or overnight, then drain well.
- 2. Grind the moong dal into a coarse paste without adding water for a thick consistency.
- 3. In a mixing bowl, combine the moong dal paste with chopped spinach, besan, chopped onion, and green chilies.
- 4. Add cumin seeds, grated ginger, salt, turmeric powder, and red chili powder to the mixture and mix thoroughly.
- 5. Heat oil in a deep frying pan over medium heat until hot but not smoking.
- 6. Take small portions of the mixture and shape them into round fritters using your hands or a spoon.
- 7. Gently drop the fritters into the hot oil and fry until golden brown and crispy, flipping occasionally for even cooking.
- 8. Remove the fritters with a slotted spoon and place them on a paper towel to drain excess oil.
- 9. Prepare mint chutney by blending mint leaves, coriander leaves, lemon juice, and a little water until smooth.
- 10. Serve the warm fritters with the freshly prepared mint chutney for a delicious meal.
