Golden Moong Dal and Spinach Fritters recipe

Crispy fritters made with moong dal and fresh spinach, spiced to perfection and paired with a tangy mint chutney.

Ingredients

  • 250 g Spinach
  • - Besan
  • 500 g Onion
  • 250g Green Chilli
  • 100 g Jeera
  • loose Ginger
  • 100 g Salt
  • 20 g Turmeric Powder
  • - Red Chilli
  • 200 ml Mustard Oil
  • 100 g Coriander Leaves
  • 250 ml Lemon Juice Concentrate
  • 1pc Watermelon

Instructions

  1. 1. Rinse and soak the green moong dal for 4-6 hours or overnight, then drain well.
  2. 2. Grind the moong dal into a coarse paste without adding water for a thick consistency.
  3. 3. In a mixing bowl, combine the moong dal paste with chopped spinach, besan, chopped onion, and green chilies.
  4. 4. Add cumin seeds, grated ginger, salt, turmeric powder, and red chili powder to the mixture and mix thoroughly.
  5. 5. Heat oil in a deep frying pan over medium heat until hot but not smoking.
  6. 6. Take small portions of the mixture and shape them into round fritters using your hands or a spoon.
  7. 7. Gently drop the fritters into the hot oil and fry until golden brown and crispy, flipping occasionally for even cooking.
  8. 8. Remove the fritters with a slotted spoon and place them on a paper towel to drain excess oil.
  9. 9. Prepare mint chutney by blending mint leaves, coriander leaves, lemon juice, and a little water until smooth.
  10. 10. Serve the warm fritters with the freshly prepared mint chutney for a delicious meal.
