Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • - Rice Flour
  • 400 g Curd
  • 1pc Watermelon
  • 20 g Turmeric Powder
  • 50 g Cumin Powder
  • 250g Green Chilli
  • - Coriander Powder
  • 100 g Salt
  • 100 g Yellow Mustard Seeds
  • 100 g Curry Leaves
  • - Fresh Tofu
  • 50 g Black Pepper Powder

Instructions

  1. 1. In a mixing bowl, combine millet flour, rice flour, turmeric, salt, and cumin powder.
  2. 2. Gradually add curd and water to the dry ingredients and whisk to form a smooth batter.
  3. 3. Chop the green chili and coriander leaves finely, then mix into the batter.
  4. 4. Heat a non-stick pan and lightly grease it with vegetable oil.
  5. 5. Pour a ladle of batter onto the pan and spread it evenly to form a pancake.
  6. 6. Cook each pancake for 2-3 minutes on one side, then flip and cook the other side until golden brown.
  7. 7. For the yogurt sauce, whisk curd with black pepper and a pinch of salt in a small bowl.
  8. 8. Heat 1 tablespoon of oil in a pan, add mustard seeds, curry leaves, and sauté for 30 seconds.
  9. 9. Add the tempered spices to the yogurt mixture and stir well to combine.
  10. 10. Slice the tofu into small cubes and pan-fry them in 1 tablespoon of oil until lightly golden.
  11. 11. Place the pancakes on a plate, top with fried tofu, and drizzle the spiced yogurt sauce generously.
  12. 12. Garnish with additional coriander leaves for a fresh finish.
