Ingredients
- 500 Grms Bajra Atta Millets Atta 500 Grms
- - Rice Flour
- 400 g Curd
- 1pc Watermelon
- 20 g Turmeric Powder
- 50 g Cumin Powder
- 250g Green Chilli
- - Coriander Powder
- 100 g Salt
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- - Fresh Tofu
- 50 g Black Pepper Powder
Instructions
- 1. In a mixing bowl, combine millet flour, rice flour, turmeric, salt, and cumin powder.
- 2. Gradually add curd and water to the dry ingredients and whisk to form a smooth batter.
- 3. Chop the green chili and coriander leaves finely, then mix into the batter.
- 4. Heat a non-stick pan and lightly grease it with vegetable oil.
- 5. Pour a ladle of batter onto the pan and spread it evenly to form a pancake.
- 6. Cook each pancake for 2-3 minutes on one side, then flip and cook the other side until golden brown.
- 7. For the yogurt sauce, whisk curd with black pepper and a pinch of salt in a small bowl.
- 8. Heat 1 tablespoon of oil in a pan, add mustard seeds, curry leaves, and sauté for 30 seconds.
- 9. Add the tempered spices to the yogurt mixture and stir well to combine.
- 10. Slice the tofu into small cubes and pan-fry them in 1 tablespoon of oil until lightly golden.
- 11. Place the pancakes on a plate, top with fried tofu, and drizzle the spiced yogurt sauce generously.
- 12. Garnish with additional coriander leaves for a fresh finish.
