Instructions

  1. 1. Rinse the foxtail millet thoroughly and soak it in water for 10 minutes while preparing other ingredients.
  2. 2. Slice the mushrooms, finely chop the onion, tomato, ginger, garlic, and coriander leaves.
  3. 3. Heat vegetable oil in a large pan and roast the cashews until golden brown; set them aside.
  4. 4. In the same pan, add cumin seeds and let them splutter, then sauté onions until translucent.
  5. 5. Add the ginger and garlic paste to the pan and cook for 1–2 minutes until fragrant.
  6. 6. Stir in the chopped tomatoes, turmeric powder, red chili powder, and garam masala; cook until the tomatoes soften.
  7. 7. Add the mushrooms to the mixture and sauté for 3–4 minutes until they release their juices.
  8. 8. Drain the soaked millet and add it to the pan, stirring well to coat it in the spice mixture.
  9. 9. Pour in water and season with salt; bring to a boil, then reduce heat to low and cover the pan.
  10. 10. Simmer for 15 minutes or until the millet absorbs all the water and becomes tender.
  11. 11. Fluff the millet with a fork and garnish with roasted cashews and fresh coriander leaves.
