Instructions
- 1. Rinse the foxtail millet thoroughly and soak it in water for 10 minutes while preparing other ingredients.
- 2. Slice the mushrooms, finely chop the onion, tomato, ginger, garlic, and coriander leaves.
- 3. Heat vegetable oil in a large pan and roast the cashews until golden brown; set them aside.
- 4. In the same pan, add cumin seeds and let them splutter, then sauté onions until translucent.
- 5. Add the ginger and garlic paste to the pan and cook for 1–2 minutes until fragrant.
- 6. Stir in the chopped tomatoes, turmeric powder, red chili powder, and garam masala; cook until the tomatoes soften.
- 7. Add the mushrooms to the mixture and sauté for 3–4 minutes until they release their juices.
- 8. Drain the soaked millet and add it to the pan, stirring well to coat it in the spice mixture.
- 9. Pour in water and season with salt; bring to a boil, then reduce heat to low and cover the pan.
- 10. Simmer for 15 minutes or until the millet absorbs all the water and becomes tender.
- 11. Fluff the millet with a fork and garnish with roasted cashews and fresh coriander leaves.
- 12. Serve warm as a wholesome, aromatic meal for lunch.
