Ingredients

  • 250g Green Chilli
  • 250 ml Lemon Juice Concentrate
  • loose Ginger
  • 1 kg Yellow Moong Dal
  • - Foxtail Millet Flour
  • - Rice Flour
  • - Coriander Powder
  • 50 g Cumin Powder
  • 20 g Turmeric Powder
  • 100 g Salt
  • 200 ml Mustard Oil

Instructions

  1. 1. Rinse and soak the foxtail millet for 15 minutes, then cook until soft and fluffy.
  2. 2. Mash the boiled yellow lentils and mix them with the cooked millet in a large bowl.
  3. 3. Add rice flour, chopped coriander, green chilies, ginger, cumin powder, turmeric, and salt to the bowl, mixing well.
  4. 4. Shape the mixture into small patties, ensuring they are firm and evenly sized.
  5. 5. Heat oil in a shallow pan and fry the patties until golden brown on both sides, flipping carefully.
  6. 6. Blend mint leaves, lemon juice, water, and a pinch of salt into a smooth chutney using a food processor.
  7. 7. Arrange the patties on a plate and serve them hot with the tangy mint chutney.
