Golden Millet and Lentil Bowl recipe

Ingredients

  • 1 kg Yellow Moong Dal
  • - Baby Tomatoes
  • 200 ml Coconut Milk
  • 250g Green Chilli
  • - Tomato Ketchup
  • - Foxtail Millet Flour
  • 20 g Turmeric Powder
  • - Cumin Seeds 100g
  • - Coriander Powder
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1 kg Water Chestnuts
  • 100 g Coriander Bunch (Dhaniya Patta)

Instructions

  1. 1. Rinse the foxtail millet and moong dal separately under running water and soak them for 15 minutes.
  2. 2. Heat oil in a deep pan and add the cumin seeds, allowing them to splutter for 30 seconds.
  3. 3. Finely chop the green chilies and sauté them in the pan along with the turmeric powder and coriander powder for 1 minute.
  4. 4. Blend the fresh tomatoes into a smooth puree and add it to the pan, cooking for 5 minutes until the mixture thickens.
  5. 5. Drain the soaked moong dal and add it to the pan, stirring to coat it in the spices and tomato puree.
  6. 6. Pour in 300 ml of water and bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  7. 7. Add the foxtail millet to the pan and mix well, pouring in an additional 200 ml of water if needed.
  8. 8. Cover the pan and let the millet and dal cook for 15 minutes, stirring occasionally to prevent sticking.
  9. 9. Once the millet and dal are tender, stir in the coconut milk and adjust the salt to your taste.
  10. 10. Garnish the dish with freshly chopped coriander leaves and serve warm.
