Ingredients
- - Foxtail Millet Flour
- 500 g Onion
- 100 g Garlic

- - Tomato Ketchup
- 100 g Lemon

- 250g Green Chilli
- 100 g Coriander Leaves
- 50 g Cumin Powder
- - Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli
- - Rice Flour
- 100 g Salt
- 200 ml Mustard Oil
Instructions
- 1. Rinse and cook the foxtail millet until soft, then allow it to cool completely.
- 2. Mash the boiled chickpeas using a fork or a blender until semi-smooth.
- 3. Finely chop the onion, garlic, ginger, green chilies, and coriander leaves.
- 4. Combine millet, mashed chickpeas, chopped vegetables, and spices in a large bowl.
- 5. Add rice flour to the mixture for binding, and knead it into a soft dough.
- 6. Shape the dough into small kebabs or patties using your hands.
- 7. Heat oil in a pan and shallow fry the kebabs until golden brown on both sides.
- 8. Prepare mint chutney by blending fresh mint leaves, lemon juice, green chili, and salt.
- 9. Slice cucumber and tomato thinly, then arrange them as a side salad.
- 10. Serve the crispy kebabs with mint chutney and fresh salad on a platter.
