Ingredients

  • 250 g Tendercuts Basa Boneless Fillet F&S
  • 1 kg Rice
  • 250 ml Real Thai Unsweetened Coconut Milk
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 100 g Catch Garlic Paste
  • 100 g Catch Ginger Paste
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 200 ml Mustard Oil
  • 50 g Pluckk Organic Curry Leaves
  • - Coriander Powder

Instructions

  1. 1. Wash the fish fillets and pat them dry with a clean towel, removing excess moisture.
  2. 2. In a bowl, mix turmeric, red chili powder, coriander powder, garlic paste, ginger paste, and 1 tsp salt into a smooth spice marinade.
  3. 3. Rub the marinade evenly over the fish fillets and let them rest for 10 minutes to absorb the flavors.
  4. 4. Heat 1 tbsp oil in a non-stick pan and place the marinated fish fillets on medium heat to grill evenly.
  5. 5. Cook each side of the fish fillets for about 5-6 minutes until golden and slightly charred, then remove from heat.
  6. 6. Rinse the rice under cold water until the water runs clear, then drain it thoroughly.
  7. 7. Bring 300 ml of water to a boil in a pot, add the rice, curry leaves, and coconut milk, and stir gently.
  8. 8. Lower the heat and simmer the rice for 12-15 minutes until fully cooked and the liquid is absorbed.
  9. 9. Add the remaining 0.5 tsp salt to the rice and mix lightly with a fork to fluff it up.
  10. 10. Plate the coconut rice on a serving dish and top it with the grilled fish fillets.
