Ingredients
- 250 g Tendercuts Basa Boneless Fillet F&S
- 1 kg Rice
- 250 ml Real Thai Unsweetened Coconut Milk
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Catch Garlic Paste
- 100 g Catch Ginger Paste
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 200 ml Mustard Oil
- 50 g Pluckk Organic Curry Leaves
- - Coriander Powder
Instructions
- 1. Wash the fish fillets and pat them dry with a clean towel, removing excess moisture.
- 2. In a bowl, mix turmeric, red chili powder, coriander powder, garlic paste, ginger paste, and 1 tsp salt into a smooth spice marinade.
- 3. Rub the marinade evenly over the fish fillets and let them rest for 10 minutes to absorb the flavors.
- 4. Heat 1 tbsp oil in a non-stick pan and place the marinated fish fillets on medium heat to grill evenly.
- 5. Cook each side of the fish fillets for about 5-6 minutes until golden and slightly charred, then remove from heat.
- 6. Rinse the rice under cold water until the water runs clear, then drain it thoroughly.
- 7. Bring 300 ml of water to a boil in a pot, add the rice, curry leaves, and coconut milk, and stir gently.
- 8. Lower the heat and simmer the rice for 12-15 minutes until fully cooked and the liquid is absorbed.
- 9. Add the remaining 0.5 tsp salt to the rice and mix lightly with a fork to fluff it up.
- 10. Plate the coconut rice on a serving dish and top it with the grilled fish fillets.
- 11. Garnish with freshly chopped coriander leaves for a vibrant touch and serve warm.
