Ingredients
- 250 g Spinach
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- - MASOOR DAL
- - Red Chilli Powder
- - Cumin Seeds / Jeera Seeds-250 Gms
- 20 g Turmeric Powder
- - Coriander Powder
- 100 g Salt
- 850 g Sundrop Heart+ Blended Cooking Oil
- 1 kg Water Chestnuts
Instructions
- 1. Rinse the red lentils thoroughly under running water and set aside.
- 2. Heat the cooking oil in a pan and add cumin seeds, letting them sizzle for a few seconds.
- 3. Add finely chopped garlic and onions to the pan, sautéing until golden brown and aromatic.
- 4. Stir in chopped tomatoes, turmeric, red chili powder, and coriander powder, cooking until the tomatoes soften completely.
- 5. Add the rinsed lentils and water, then cover and simmer until the lentils are tender and cooked through.
- 6. Wash and roughly chop the spinach, adding it to the pan once the lentils are cooked.
- 7. Stir well and cook for another 5 minutes until the spinach wilts and blends with the lentils.
- 8. Adjust the salt and seasoning to taste, stirring to ensure even flavor distribution.
- 9. Let the stir-fry rest for 2 minutes to allow the flavors to meld before serving.
- 10. Serve the lentil and spinach stir-fry hot, garnished with a sprinkle of coriander leaves if desired.
