Ingredients
- 100 g Yellow Dates
- 250 g Spinach
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- - Red Chilli
- 1 kg Yellow Moong Dal
- 20 g Turmeric Powder
- - Cumin Seeds / Jeera Seeds-250 Gms
- 200 ml Mustard Oil
- 100 g Salt
- 1 kg Water Chestnuts
- - Coriander Powder
Instructions
- 1. Wash the yellow lentils thoroughly under running water until clean.
- 2. Heat oil in a deep pan and add cumin seeds, letting them sizzle for a few seconds.
- 3. Add finely chopped onion, garlic, and ginger, sautéing until golden brown.
- 4. Stir in chopped tomatoes, turmeric powder, and chili powder, cooking until the tomatoes are soft.
- 5. Add washed lentils and mix well, coating them in the spice mixture.
- 6. Pour in water, season with salt, and bring the mixture to a boil.
- 7. Lower the heat, cover, and let the lentils simmer for 15 minutes, stirring occasionally.
- 8. Add the chopped spinach and cook for another 5 minutes until wilted and well combined.
- 9. Check the seasoning and adjust salt or spices as needed.
- 10. Serve hot, garnished with a sprinkle of fresh coriander leaves if available.
