Golden Lentil & Spinach Khichdi Recipe

A hearty and nourishing khichdi made with protein-packed lentils, fresh spinach, and aromatic spices, perfect for a comforting lunch.
Ingredients
- 1 kg Basmati Rice
- 1 kg Yellow Moong Dal
- loose Ginger
- 100 g Garlic
- 250g Green Chilli
- 20 g Turmeric Powder
- 100 g Jeera
- - Bay Leaf
- 100 g Salt
- 200 ml Ghee
- 1pc Watermelon
Instructions
- 1. Rinse the basmati rice and yellow moong dal thoroughly under running water and set aside.
- 2. Heat ghee in a pressure cooker and add cumin seeds and bay leaf, allowing them to sizzle for a few seconds.
- 3. Add finely chopped ginger, garlic, and green chili, sautéing until fragrant and lightly golden.
- 4. Stir in turmeric powder and the washed rice and dal, mixing well to coat them with the spices.
- 5. Pour in water and add salt, stirring gently to combine all the ingredients evenly.
- 6. Chop the spinach leaves finely and add them to the cooker, mixing them with the rice and dal.
- 7. Close the pressure cooker lid and cook for 3-4 whistles on medium heat until the khichdi is soft and well-cooked.
- 8. Let the steam release naturally, then open the cooker and fluff the khichdi gently with a spoon.
- 9. Adjust the consistency by adding a little hot water if needed and simmer for a minute.
- 10. Serve the khichdi hot, garnished with a drizzle of ghee for added richness.
