Golden Lentil & Spinach Khichdi recipe

Ingredients

  • 1 kg Basmati Rice
  • 1 kg Yellow Moong Dal
  • loose Ginger
  • 100 g Garlic
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • 100 g Jeera
  • - Bay Leaf
  • 100 g Salt
  • 200 ml Ghee
  • 1pc Watermelon

Instructions

  1. 1. Rinse the basmati rice and yellow moong dal thoroughly under running water and set aside.
  2. 2. Heat ghee in a pressure cooker and add cumin seeds and bay leaf, allowing them to sizzle for a few seconds.
  3. 3. Add finely chopped ginger, garlic, and green chili, sautéing until fragrant and lightly golden.
  4. 4. Stir in turmeric powder and the washed rice and dal, mixing well to coat them with the spices.
  5. 5. Pour in water and add salt, stirring gently to combine all the ingredients evenly.
  6. 6. Chop the spinach leaves finely and add them to the cooker, mixing them with the rice and dal.
  7. 7. Close the pressure cooker lid and cook for 3-4 whistles on medium heat until the khichdi is soft and well-cooked.
  8. 8. Let the steam release naturally, then open the cooker and fluff the khichdi gently with a spoon.
  9. 9. Adjust the consistency by adding a little hot water if needed and simmer for a minute.
  10. 10. Serve the khichdi hot, garnished with a drizzle of ghee for added richness.
