- 100 g Coriander Leaves
- 200 ml Coconut Milk
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 20 g Turmeric Powder
- 100 g Jeera
- - Coriander Powder
- 100 g Salt
- 1 l Soyabean Oil
Instructions
- 1. Rinse the red lentils thoroughly under running water until the water runs clear.
- 2. Heat vegetable oil in a large pot or pan and add cumin seeds; sauté until aromatic.
- 3. Finely chop the onion, garlic, and ginger, then add them to the pot and cook until golden brown.
- 4. Dice the tomato and stir it into the pot; cook until softened and blended with the onion mixture.
- 5. Add turmeric powder, coriander powder, and red chili powder; mix well to coat the vegetables in spices.
- 6. Pour in the coconut milk and water, stirring to combine and create a creamy base for the stew.
- 7. Add the rinsed lentils to the pot and bring the mixture to a boil over medium heat.
- 8. Reduce the heat and let the stew simmer for 20 minutes, stirring occasionally to prevent sticking.
- 9. Season with salt to taste and adjust spices if needed; continue simmering until lentils are tender.
- 10. Finely chop coriander leaves and sprinkle them over the stew before serving for added freshness.
