A delicious and portable lunch featuring spiced lentils and sautéed vegetables wrapped in soft whole wheat flatbreads, perfect for a midday energy boost.
Ingredients
- 500 g Wheat Flour / Maida
- 1 piece Yellow Bell Pepper
- 250 g Carrot
- 500 g Onion
- 250g Green Chilli
- 20 g Turmeric Powder
- - Coriander Powder
- 100 g Jeera
- 100 g Salt
- 200 ml Mustard Oil
- 100 g Coriander Leaves
- 1pc Watermelon
Instructions
- 1. Rinse and cook the lentils in water until soft and mushy, approximately 15 minutes.
- 2. In a pan, heat oil and add cumin seeds, letting them sizzle for 30 seconds.
- 3. Add finely chopped onions, green chilies, and sauté until golden brown.
- 4. Add chopped capsicum and carrot, cooking until tender but slightly crisp.
- 5. Stir in turmeric and coriander powder, mixing well with the vegetables.
- 6. Add the cooked lentils to the pan, seasoning with salt and stirring to combine.
- 7. Prepare a dough using whole wheat flour, water, and a pinch of salt, then roll out flatbreads.
- 8. Cook the flatbreads on a hot griddle until both sides are golden and puffed slightly.
- 9. Place the lentil and vegetable mixture onto the flatbreads, garnishing with coriander leaves.
- 10. Roll the flatbreads tightly to form kathi rolls and secure with parchment paper or foil.
