Ingredients
- 1 kg Yellow Moong Dal
- 200 g Spinach (Palak)
- - Onion-250 Gms
- 500 g Desi Tomato (Tamatar)
- 100 g Garlic - Single Clove
- loose Ginger
- 20 g Turmeric Powder
- 100 g Popular Essentials Jeera (Cumin Seeds)
- - Red Chilli Powder
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 500 ml Oil (For Frying)
Instructions
- 1. Rinse the yellow lentils thoroughly under running water and soak them for 15 minutes.
- 2. Heat vegetable oil in a pan, then add cumin seeds and let them splutter for 30 seconds.
- 3. Add finely chopped garlic, ginger, and onion to the pan, sautéing until golden and fragrant.
- 4. Stir in turmeric powder, red chili powder, and salt, cooking for another minute to toast the spices.
- 5. Add diced tomatoes and cook until soft and blended with the spices, stirring occasionally.
- 6. Drain the lentils and add them to the pan, mixing well to coat them in the spice mixture.
- 7. Pour in water and bring to a boil, then lower the heat to simmer and cook the lentils until tender.
- 8. Add fresh spinach to the pan, stirring gently until wilted and evenly combined.
- 9. Cook the stir-fry for 2-3 more minutes to allow the flavors to meld together.
- 10. Taste and adjust the seasoning if needed before serving hot.
