- 1 pack Mushrooms Button
- 500 g Onion
- 250 g Carrot
- 100 g Garlic
- 250 ml Olive Oil
- - Vegetable Stock Cubes
- - Rice Flour
- 30G Tong Garden Paprika Pumpkin Hot (30g)
- 50 g Black Pepper
- 100 g Salt
- - Thyme
Instructions
- 1. Preheat the oven to 200°C and grease a baking dish lightly with olive oil.
- 2. Rinse the red lentils thoroughly under cold water and set aside.
- 3. Finely chop the onion, carrot, garlic, and mushrooms into small pieces.
- 4. Heat olive oil in a pan and sauté the onion, garlic, and carrot until softened, about 5 minutes.
- 5. Add the mushrooms to the pan and cook until they release their moisture, stirring occasionally.
- 6. Stir in the red lentils, vegetable stock, paprika, black pepper, and salt, cooking for 10 minutes.
- 7. Mix rice flour and nutritional yeast in a small bowl to form a smooth paste with water.
- 8. Add the paste to the lentil mixture, stirring to thicken the consistency further.
- 9. Transfer the mixture into the greased baking dish and spread evenly across the surface.
- 10. Sprinkle fresh thyme over the top for a fragrant finish.
- 11. Bake in the oven for 20 minutes or until the top is golden and slightly crisp.
- 12. Remove the dish from the oven and allow to cool for 5 minutes before serving.
- 13. Serve warm, garnished with additional thyme or a side salad as desired.
