Golden Hashbrown and Parmesan Dinner recipe

A delightful vegetarian dinner featuring crispy golden hashbrowns topped with perfectly broiled eggs and melted parmesan cheese. This simple yet satisfying dish is perfect for a cozy evening meal.

Ingredients

  • 200 g Old Hill Parmesan Cheese
  • 200 g Organigram Chia Seeds
  • 125 g Mooz Butter Garlic & Herbes
  • 100 g Catch Sprinklers - Iodized Table Salt

Instructions

  1. 1. Heat two large skillets over medium heat and preheat the broiler of your oven. Ensure the oven rack is in the middle position.
  2. 2. Melt 2 tablespoons of butter in one skillet and 1 tablespoon of butter in the second skillet. Remove the skillet with less butter from the heat.
  3. 3. Melt an additional tablespoon of butter in the skillet with more butter and spread it evenly to coat the bottom. Sprinkle 1/4 cup of chia seeds evenly over the skillet and press them down gently with the back of a metal spatula to form a compact layer.
  4. 4. Sprinkle 1/2 teaspoon of salt over the chia seed layer and cook undisturbed for 2-3 minutes until the bottom forms a golden-brown crust.
  5. 5. Place a large rimless baking sheet or plate on top of the skillet and carefully invert it to flip the chia seed layer browned side up. Return the skillet to the heat and melt the remaining tablespoon of butter.
  6. 6. Slide the chia seed layer back into the skillet and sprinkle half of the grated parmesan cheese over the top. Cook undisturbed for another 2-3 minutes. If the cheese hasn’t melted, cover the skillet briefly after removing it from the heat to allow the residual heat to finish melting the cheese.
  7. 7. While the chia seed layer is cooking, return the second skillet to medium heat. Sprinkle 1/4 cup of chia seeds evenly over the skillet and toast them lightly for 1-2 minutes, stirring frequently to release their nutty aroma. Add 1 cup of water to the skillet and stir to combine. Sprinkle with 1/4 teaspoon of salt.
  8. 8. Once the chia mixture begins to thicken and absorb the water, transfer the skillet to the preheated broiler. Broil for 1-2 minutes, watching closely, until the mixture is fully set.
  9. 9. Remove the chia seed cake from the skillet and cut it into four wedges. Place two servings of the chia mixture on top of each wedge and sprinkle with the remaining parmesan cheese.
  10. 10. Serve immediately, allowing the thickened chia mixture to dress the crispy chia seed layer for a bistro-style dinner experience.
