Ingredients
- 300 g Nutrich Chicken Thigh Boneless
- 1 kg Basmati Rice
- 250 ml Real Thai Unsweetened Coconut Milk
- 500 ml Oil (For Frying)
- 250 g Organically Grown Sambhar Onion
- 100 g Garlic - Single Clove
- loose Ginger
- - EVE.CUMIN POWDER 50GM
- 5G Turmeric Powder
- 10G Red Chili Powder
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 25 g Whole Black Pepper
- - Frozen Mixed Vegetables
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Rinse the rice thoroughly under cold water to remove excess starch.
- 2. Boil 300 ml of water in a saucepan, add rice, and cook until tender, about 12 minutes.
- 3. Finely chop the onion, garlic, and ginger; set them aside for cooking.
- 4. Heat vegetable oil in a large pan over medium heat and sauté the onions until golden brown.
- 5. Add garlic, ginger, cumin powder, turmeric powder, and chili powder to the pan; stir for 1 minute.
- 6. Cut chicken breast into bite-sized pieces and add to the pan; cook until lightly browned on all sides.
- 7. Pour in the coconut milk, season with salt and black pepper, and let it simmer for 10 minutes.
- 8. Add frozen mixed vegetables to the coconut chicken and cook for another 5 minutes until tender.
- 9. Fluff the cooked rice with a fork and season lightly with salt if needed.
