Ingredients
- 140 g Peri Peri Chickpeas
- 1 kg Rice
- 50 g Cloves
- 1 Combo Heritage Cow Ghee & Heritage Buffalo Ghee
- 100 g Lemon
- 100 g Garlic - Single Clove
- - Ginger Powder
- 100 g Mix Seeds
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
- 500 G Preserved Dried Salted Black Beans
- - White Pepper
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 20 g Turmeric Powder
Instructions
- 1. Rinse and soak the rice in water for 15 minutes, then drain and set aside.
- 2. Heat 10g of Heritage Cow Ghee in a pan and sauté cloves until aromatic.
- 3. Add the rice, turmeric, and 300ml of water to the pan; stir and bring to a boil.
- 4. Lower the heat, cover, and cook the rice until fluffy, approximately 15 minutes.
- 5. In a separate bowl, mix boiled chickpeas with minced garlic, ginger powder, and Suhana Dal Makhani Spice Mix.
- 6. Heat the remaining 5g of ghee in a large skillet and add the chickpeas mixture.
- 7. Stir-fry the chickpeas on medium heat for 8-10 minutes until they are lightly crispy and infused with spices.
- 8. Squeeze lemon juice over the chickpeas and sprinkle with chopped coriander leaves.
- 9. Plate the turmeric rice and arrange the spiced chickpeas tikka on top.
- 10. Garnish with preserved dried salted black beans and a dash of white pepper before serving.
