Ingredients
- 1 pack (500 g) Daily Good Besan / Gram Flour / Chana Besan
- 100 g Baking Powder
- 20 g Turmeric Powder
- 50 g Everest Cumin Powder
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 100 ml Oleev Olivana Natural Olive Oil (Bottle)
- 100 g Garlic
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
- 1 Bunch Mint Leaves (Pudina)
- 250 ml Keya Lemon Juice
- 100 g Cherry
- - Red Chilli Powder
- 30 g Pumpkin Seeds
Instructions
- 1. In a mixing bowl, combine chickpea flour, baking powder, turmeric, cumin, and salt.
- 2. Gradually add water to the dry mixture, whisking until you get a smooth batter.
- 3. Heat a non-stick pan over medium heat and add a little olive oil to coat the surface.
- 4. Pour a ladleful of batter onto the pan and spread it evenly to form a pancake.
- 5. Cook the pancake for 2-3 minutes on each side until golden and edges are crisp. Repeat for remaining batter.
- 6. For the salad, combine coriander leaves, mint leaves, cherry tomatoes, and red onion in a bowl.
- 7. Add lemon juice and a pinch of salt, tossing gently to mix the salad ingredients well.
- 8. Toast the pumpkin seeds in a dry pan for 1 minute to enhance their flavor.
