Ingredients
- 100 g Coriander Leaves
- - Baby Tomatoes
- 500 g Onion
- 4 Taco Shells
- 60 g Seasoning - All Purpose
- 500 g Chicken Whole
- 500g Sweet Lime
- 50 g Black Pepper
- 200 g Table Salt
- 500G Loose Besan
- - Tong Garden Cheddar N Jalapeno Chickpeas
- - Rice Flour
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Jeera
- - Coriander Powder
- 100 g Salt
- 1pc Watermelon
- 250g Green Chilli
- 250 ml Lemon Juice Concentrate
- 500 g Sugar
Instructions
- 1. Mash the boiled chickpeas lightly in a bowl using a fork or masher.
- 2. In a mixing bowl, combine chickpea flour, rice flour, turmeric, chili powder, coriander powder, cumin seeds, and salt.
- 3. Slowly add water to the flour mixture, stirring continuously to create a thick batter.
- 4. Fold the mashed chickpeas and chopped coriander leaves into the batter, ensuring an even mix.
- 5. Heat oil in a deep frying pan over medium heat until it reaches frying temperature.
- 6. Using a spoon, drop small portions of the batter into the hot oil, frying until golden brown and crispy.
- 7. Remove the fritters from the oil and place them on paper towels to drain excess oil.
- 8. To prepare the mint chutney, blend mint leaves, green chilies, lemon juice, sugar, and a pinch of salt until smooth.
- 9. Serve the crispy chickpea fritters hot with a side of mint chutney for dipping.
