Ingredients
- 500G Loose Besan
- 1pc Watermelon
- 500 g Onion
- - Tomato Ketchup
- 250g Green Chilli
- 100 g Jeera
- 20 g Turmeric Powder
- 100 g Salt
- - Coriander Powder
- 250 g Carrot
- 1 piece Yellow Bell Pepper
- 100G Oleo
- 250 ml Lemon Juice Concentrate
- 50 g Black Pepper
Instructions
- 1. Finely chop the onion, tomato, green chili, cilantro, carrot, and capsicum for the salsa and pancake batter.
- 2. In a mixing bowl, whisk together chickpea flour, water, turmeric, salt, and cumin seeds to form a smooth batter.
- 3. Add half of the chopped vegetables (onion, cilantro, carrot, capsicum) to the batter and mix well.
- 4. Heat 1 tablespoon of oil in a non-stick pan over medium heat and pour a ladle of the batter to spread into a pancake.
- 5. Cook the pancake until golden brown on one side, then flip and cook the other side. Repeat for remaining batter.
- 6. Meanwhile, heat 1 tablespoon of oil in another pan and sauté the remaining vegetables for 2-3 minutes.
- 7. Add salt, black pepper, and a squeeze of lemon juice to the sautéed vegetables to make the salsa.
- 8. Serve the warm chickpea pancakes with the freshly prepared spicy vegetable salsa on top.
