- 100 g Coriander Leaves
- 80 g Soya Chunks
- - Fresh Tofu
- 1 head Cauliflower
- 500 g Onion
- 100 g Garlic
- 100 g Unsalted Butter
- - Thyme
- 1 liter Sunflower Oil
- 100 g Salt
- 50 g Black Pepper
- 1 kg Water Chestnuts
Instructions
- 1. Soak the soy chunks in hot water for 8 minutes, then drain and press out the excess liquid well.
- 2. Steam or microwave the cauliflower florets until just tender, then chop them into small, bite-sized pieces.
- 3. Heat the oil and half the butter in a wide pan, then cook the onion and garlic until softened and fragrant.
- 4. Add the soy chunks, tofu cubes, cauliflower, salt, black pepper, and thyme, then fry until lightly golden.
- 5. Fold in the spinach and the remaining butter, stirring until the leaves wilt and the hash looks glossy.
- 6. Let the pan sit for a minute so the base crisps slightly, then divide it evenly between two plates and serve hot.
