About this recipe

A cozy English-style breakfast bake with paneer, buttery cauliflower mash, and tender cabbage. It is rich, savory, and filling, with a low-carb balance that suits a lighter morning meal.

Ingredients

  • 200 g Paneer
  • 1 head Cauliflower
  • 250 g Spinach
  • 200 g Butter Cookies
  • 200Ml Dr. Patkar'S - Apple Cider Vinegar With Ginger, Garlic, Lemon, & Honey (200ml)
  • - Coriander Powder
  • 200 ml Mustard Oil
  • 50 g Black Pepper
  • 100 g Salt

Instructions

  1. 1. Heat the oven to 200°C and lightly grease a small baking dish with a little of the butter.
  2. 2. Steam the cauliflower florets until tender, then drain them very well so the mash stays thick.
  3. 3. Mash the cauliflower with half the butter, mustard powder, salt, and black pepper until smooth.
  4. 4. Warm the oil in a pan, then sauté the onion and garlic for two minutes until fragrant and soft.
  5. 5. Add the cabbage and spinach, cook until wilted, then crumble in the paneer and stir gently.
  6. 6. Season the filling well, spread it into the baking dish, and press it into an even layer.
  7. 7. Spoon the cauliflower mash on top, dot with the remaining butter, and bake until the top turns lightly golden.
  8. 8. Rest the bake for three minutes, then cut into two generous breakfast portions and serve hot.
