  • 100 g Curry Leaves
  • 100 g Jeera
  • 250g Green Chilli
  • loose Ginger
  • 20 g Turmeric Powder
  • - Coriander Powder

  • 1pc Watermelon

Instructions

  1. 1. Rinse the amaranth grains and moong dal thoroughly under running water.
  2. 2. Heat coconut oil in a deep pot and add cumin seeds until they crackle.
  3. 3. Add finely chopped ginger, curry leaves, and slit green chilies, sautéing for 1 minute.
  4. 4. Mix in turmeric powder, chopped carrots, and green beans, cooking for 2 minutes.
  5. 5. Add the rinsed amaranth and moong dal, stirring well to coat with the spices.
  6. 6. Pour in water and season with rock salt, bringing the mixture to a boil.
  7. 7. Reduce heat to a simmer, cover, and cook for 20 minutes until grains and dal are tender.
  8. 8. Stir occasionally to prevent sticking, adjusting water if needed for desired consistency.
  9. 9. Once cooked, garnish with freshly chopped coriander leaves.
  10. 10. Serve hot with a drizzle of coconut oil for added flavor and richness.
