- 100 g Curry Leaves
- 100 g Jeera
- 250g Green Chilli

- 20 g Turmeric Powder

Instructions
- 1. Rinse the amaranth grains and moong dal thoroughly under running water.
- 2. Heat coconut oil in a deep pot and add cumin seeds until they crackle.
- 3. Add finely chopped ginger, curry leaves, and slit green chilies, sautéing for 1 minute.
- 4. Mix in turmeric powder, chopped carrots, and green beans, cooking for 2 minutes.
- 5. Add the rinsed amaranth and moong dal, stirring well to coat with the spices.
- 6. Pour in water and season with rock salt, bringing the mixture to a boil.
- 7. Reduce heat to a simmer, cover, and cook for 20 minutes until grains and dal are tender.
- 8. Stir occasionally to prevent sticking, adjusting water if needed for desired consistency.
- 9. Once cooked, garnish with freshly chopped coriander leaves.
- 10. Serve hot with a drizzle of coconut oil for added flavor and richness.
