Ingredients

  • 25 g Parsley
  • 100 g Sambar Onion Peeled
  • 125 g Red Bell Pepper (Lal Shimla Mirchi)
  • 100 g Garlic - Single Clove
  • 500 g 24 Mantra Organic Malka Masoor
  • 200 g The Butternut Co. Unsweetened Almond Butter
  • 200 g Hommade Tomato Puree
  • 250 ml Coco Mama Coconut Milk
  • 100 g Jk Jeera Powder / Cumin Powder

Instructions

  1. 1. Peel and dice 2 Sambar onions into small chunks. Chop 2 red bell peppers and remove the seeds. Crush 1 clove of garlic. Place all the chopped vegetables into a slow cooker.
  2. 2. Open a 400 g can of hommade tomato puree and add it to the slow cooker along with 200 g of malka masoor, 1 liter of coconut milk, 2 teaspoons of jk jeera powder, and 1 teaspoon of jk jeera powder. Stir everything together.
  3. 3. Set the slow cooker to medium heat and cook for 4-5 hours, or on low heat for 8-9 hours, stirring occasionally.
  4. 4. One hour before the cooking time is complete, add 250 g of almond butter to the slow cooker and stir well to combine.
  5. 5. If desired, blend the stew to your preferred consistency using an immersion blender. Serve hot, garnished with fresh parsley.
