Ingredients
- 25 g Parsley
- 100 g Sambar Onion Peeled
- 125 g Red Bell Pepper (Lal Shimla Mirchi)
- 100 g Garlic - Single Clove
- 500 g 24 Mantra Organic Malka Masoor
- 200 g The Butternut Co. Unsweetened Almond Butter
- 200 g Hommade Tomato Puree
- 250 ml Coco Mama Coconut Milk
- 100 g Jk Jeera Powder / Cumin Powder
Instructions
- 1. Peel and dice 2 Sambar onions into small chunks. Chop 2 red bell peppers and remove the seeds. Crush 1 clove of garlic. Place all the chopped vegetables into a slow cooker.
- 2. Open a 400 g can of hommade tomato puree and add it to the slow cooker along with 200 g of malka masoor, 1 liter of coconut milk, 2 teaspoons of jk jeera powder, and 1 teaspoon of jk jeera powder. Stir everything together.
- 3. Set the slow cooker to medium heat and cook for 4-5 hours, or on low heat for 8-9 hours, stirring occasionally.
- 4. One hour before the cooking time is complete, add 250 g of almond butter to the slow cooker and stir well to combine.
- 5. If desired, blend the stew to your preferred consistency using an immersion blender. Serve hot, garnished with fresh parsley.
