Ingredients
- 500 g Organically Grown Small Brinjal
- 250 g Zucchini Yellow
- 200 g Orange Carrot (Gajar)
- 1 ltr Bertolli Extra Virgin Olive Oil
- 100 g Milky Mist Cooking Unsalted Butter
- 100 g Sambar Onion Peeled
- 250 g Spring Onion
- 1000 g Japanese Choice Jasmine Ready To Cook Thai Rice
- 100 g Catch Sprinklers - Iodized Table Salt
- 100 g Zoff Garlic Powder
- 100 g Everest White Pepper
Instructions
- 1. Preheat your oven to 350 degrees F and prepare a large baking dish.
- 2. Using the tip of a sharp paring knife, make 20 evenly spaced small slits about 1 1/2 inches in the zucchini.
- 3. Insert the garlic powder into the slits as much as possible.
- 4. In a large mixing bowl, toss the organically grown small brinjal, zucchini, carrots, and spring onion with olive oil, salt, and ground white pepper until evenly coated.
- 5. Arrange the vegetables in the baking dish, cover with aluminum foil, and bake for 45-50 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- 6. While the vegetables are roasting, melt the butter in a medium saucepan over medium heat.
- 7. Add the sambar onion and cook, stirring, until soft and translucent, about 3 to 4 minutes.
- 8. Add the jasmine rice and cook, stirring, until the rice is opaque and has a nutty aroma, about 2 minutes.
- 9. Add water and a pinch of salt, then bring to a boil.
- 10. Cover the saucepan with a tight-fitting lid and transfer to the oven. Bake for 25 to 30 minutes, or until the rice is tender and the liquid is absorbed.
- 11. Remove the rice from the oven and gently stir in the spring onion. Cover and let sit for 5 to 10 minutes.
- 12. Serve the roasted vegetables alongside the herbed rice pilaf, garnished with additional spring onion if desired.
