- 100 g Tamarind

- NaN Kodo Millet
- 100 g Garlic
- 20 g Turmeric Powder

- 1. Rinse the long grain rice under cold water until the water runs clear to remove excess starch.
- 2. In a pot, bring 300 ml water to a boil, add the rice, turmeric powder, and salt, then reduce heat and simmer covered for 15 minutes.
- 3. While the rice cooks, finely chop the garlic cloves and fresh coriander leaves, setting them aside for later use.
- 4. Heat a pan over medium heat and add vegetable oil and butter, allowing the butter to melt completely.
- 5. Add the chopped garlic to the pan and sauté until fragrant, making sure not to burn the garlic.
- 6. Stir in the cumin powder, red chili powder, and a pinch of salt, cooking for 30 seconds to bloom the spices.
- 7. Add the cleaned prawns to the pan and cook for 3-4 minutes on each side until they turn pink and are fully cooked.
- 8. Squeeze fresh lemon juice over the prawns and mix well to enhance the flavor profile.
- 9. Once the rice is done, fluff it gently with a fork and transfer it to serving plates.
