Ingredients
- 100 g Garlic
- 50 g Parsley Leaves
- 250 ml Lemon Juice Concentrate
- - Vegetable Stock Cubes
- 1 kg Basmati Rice
- 100 g Pasteurised Butter
- 250 ml Olive Oil
- - Coriander Powder
- - Red Chilli
- 100 g Salt
- 50 g Black Pepper Powder
Instructions
- 1. Wash the basmati rice thoroughly and soak it in water for 20 minutes, then drain it.
- 2. Heat olive oil in a saucepan, add half the minced garlic, and sauté until fragrant.
- 3. Add the drained rice to the saucepan and toast lightly for 2 minutes, stirring constantly.
- 4. Pour in vegetable stock, add salt, and bring to a boil. Lower heat, cover, and simmer until rice cooks through.
- 5. Meanwhile, heat a grill pan and lightly grease it with olive oil.
- 6. Toss the calamari rings with lemon juice, red chili flakes, salt, and black pepper.
- 7. Grill the calamari on high heat for 2-3 minutes on each side until tender and slightly charred.
- 8. In a small pan, melt butter and sauté the remaining garlic until golden brown.
- 9. Add chopped parsley and coriander to the garlic butter and stir well to combine.
- 10. Remove the grilled calamari from the grill and brush generously with the garlic butter glaze.
- 11. Fluff the cooked rice with a fork and mix in some fresh coriander for added flavor.
- 12. Plate the herb rice and top it with the garlic-buttered calamari rings.
- 13. Garnish with extra parsley and a wedge of lemon before serving.
- 14. Serve immediately while warm for the best taste and texture.
