- 100 g Coriander Leaves
- 1 kg Yellow Moong Dal
- 250g Green Chilli
- 1 bunch Thai Basil
- 100 g Til
- 250 ml Lemon Juice Concentrate
- - Rice Flour
- 20 g Turmeric Powder
- 100 g Hing Khoda
- 100 g Salt
- 1 liter Sunflower Oil
Instructions
- 1. Rinse the split yellow lentils thoroughly and soak them in water for 2 hours. Drain and blend into a smooth batter using coconut , ensuring there are no lumps.
- 2. In a mixing bowl, combine the lentil batter with rice flour, chopped green chili, coriander, Thai basil, sesame seeds, turmeric powder, asafoetida, salt, and lemon juice. Mix well to form a smooth, slightly thick batter.
- 3. Heat a non-stick skillet over medium heat and lightly grease it with vegetable oil. Pour a ladleful of batter onto the skillet and spread it into a thin, circular pancake using the back of the ladle.
- 4. Cook the pancake on medium heat for 2-3 minutes until the edges start to lift and the bottom turns golden brown. Flip the pancake carefully and cook the other side for another 2 minutes.
- 5. Repeat the process with the remaining batter, greasing the skillet as needed. Serve the pancakes warm with your choice of dipping sauce or a fresh salad.
