  • 200 ml Coconut Milk
  • 100 g Yellow Mustard Seeds
  • 100 g Curry Leaves
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • 100 g Salt
  • 250 ml Lemon Juice Concentrate
  • 100G Oleo

  1. 1. Wash the spinach thoroughly and chop it finely, then set aside.
  2. 2. Clean the mushrooms, slice them thinly, and keep them ready for cooking.
  3. 3. Heat oil in a pan and add mustard seeds, allowing them to crackle.
  4. 4. Add curry leaves and green chilies, sautéing for 30 seconds to release their aroma.
  5. 5. Stir in the chopped spinach and mushrooms, cooking for 5 minutes until they soften slightly.
  6. 6. Sprinkle turmeric powder and salt, mixing well to coat the vegetables evenly.
  7. 7. Pour the coconut milk into the pan and simmer on low heat for 5 minutes, letting the flavors meld together.
