- 1 pack Mushrooms Button
- 200 ml Coconut Milk
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- 250g Green Chilli
- 20 g Turmeric Powder
- 100 g Salt
- 250 ml Lemon Juice Concentrate
- 100G Oleo
Instructions
- 1. Wash the spinach thoroughly and chop it finely, then set aside.
- 2. Clean the mushrooms, slice them thinly, and keep them ready for cooking.
- 3. Heat oil in a pan and add mustard seeds, allowing them to crackle.
- 4. Add curry leaves and green chilies, sautéing for 30 seconds to release their aroma.
- 5. Stir in the chopped spinach and mushrooms, cooking for 5 minutes until they soften slightly.
- 6. Sprinkle turmeric powder and salt, mixing well to coat the vegetables evenly.
- 7. Pour the coconut milk into the pan and simmer on low heat for 5 minutes, letting the flavors meld together.
- 8. Turn off the heat and allow the mixture to cool slightly before adding lemon juice for a tangy touch.
- 9. Assemble the dish by placing cooked rice in bowls and generously topping with the spinach-mushroom mixture.
