Ingredients
- 250 g Tendercuts Basa Boneless Fillet F&S
- 100 g Lemongrass
- 1 Piece Red Bell Pepper (Kempu Dappa Menasinakaayi)
- 200 g Orange Carrot (Gajar)
- - Onion-250 Gms
- 500ml Lee Kum Kee Light Soy Sauce
- - Rice Vinegar
- - Corn Starch Powder
- 500 ml Oil (For Frying)
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- medium Chilli Green Long
- 200 G Spring Onion(200Gm)
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 25 g Whole Black Pepper
Instructions
- 1. Rinse the fish fillets and pat them dry, then cut them into bite-sized pieces.
- 2. Trim the lemongrass stalks and finely mince the tender inner core.
- 3. Thinly slice the red bell pepper, carrot, and onion into even strips for quick cooking.
- 4. Heat 1 tablespoon of vegetable oil in a pan or wok over medium heat.
- 5. Add the minced lemongrass and sauté for about 1 minute until fragrant.
- 6. Increase the heat and add the fish pieces, searing them for 2-3 minutes until lightly golden.
- 7. Remove the fish from the pan and set aside, then add the remaining oil to the pan.
- 8. Stir-fry the sliced vegetables for 3-4 minutes until they are slightly tender but still crisp.
- 9. In a small bowl, mix the soy sauce, rice vinegar, cornstarch, and 2 tablespoons of water to create a sauce.
- 10. Pour the sauce into the pan, stirring well to coat the vegetables evenly.
- 11. Return the fish to the pan and gently toss everything together for 2 minutes.
