Ingredients
- 6 pcs White Eggs
- - Foxtail Millet Flour
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 250g Green Chilli
- 50 g Cumin Powder
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- - Coriander Powder
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Rinse the millet thoroughly and soak in water for 10 minutes.
- 2. Heat 1 tablespoon oil in a pan; sauté finely chopped onions until golden brown.
- 3. Add minced garlic, ginger, and green chilies; cook for 2 minutes until aromatic.
- 4. Stir in chopped tomatoes and cook until the mixture becomes soft and pulpy.
- 5. Add coriander powder, cumin powder, turmeric, red chili powder, and salt; mix well.
- 6. Pour 200 ml of water into the pan; simmer the curry base for 5 minutes.
- 7. Gently add boiled eggs into the curry; coat them with the masala and cook for 5 minutes.
- 8. Heat 1 tablespoon oil in another pan; add soaked millet and stir-fry for 2 minutes.
- 9. Add 100 ml of water to the millet; cook covered on low heat until water is absorbed.
- 10. Sprinkle garam masala and garnish egg curry with fresh coriander leaves.
- 11. Serve the egg curry hot alongside the spiced millet for a balanced meal.
