  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 200 G Spring Onion(200Gm)
  • 50 g White Sesame Seeds

Instructions

  1. 1. Rinse the short-grain rice thoroughly under cold water until the water runs clear to remove excess starch.
  2. 2. Cook the rice with 300ml of water in a covered pot or rice cooker until soft and fluffy, approximately 15 minutes.
  3. 3. Crack the eggs into a bowl, add a pinch of salt, and whisk vigorously until well combined and slightly frothy.
  4. 4. Heat a skillet over medium heat and add the sesame oil, swirling to coat the pan evenly.
  5. 5. Pour the whisked eggs into the skillet and gently stir with a spatula, folding repeatedly to create soft, fluffy curds.
  6. 6. Remove the eggs from the heat just before they are fully set to maintain a creamy texture.
  7. 7. Divide the cooked rice into two bowls, fluffing it lightly with a fork for an airy texture.
  8. 8. Place the scrambled eggs over the rice, spreading evenly to cover the surface.
  9. 9. Drizzle soy sauce over the eggs and rice for a savory boost of flavor.
  10. 10. Finely chop the green onions and sprinkle them over the bowls for freshness and color.
  11. 11. Garnish each bowl with toasted sesame seeds for a nutty crunch and additional flavor.
  12. 12. Serve immediately while warm, accompanied by a cup of green tea if desired.
