Ingredients
- 1 pack (6 pcs) Fresh White Eggs
- 1 kg Rice
- 500 g Onion
- 500 g Desi Tomato (Tamatar)
- medium Chilli Green Long
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
- 100 g Popular Essentials Jeera (Cumin Seeds)
- 20 g Turmeric Powder
- - Red Chilli Powder
- - Ginger Powder
- 110 g Unpeeled Garlic Cloves
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 50 g Black Pepper Powder
- 850 g Sundrop Heart+ Blended Cooking Oil
Instructions
- 1. Rinse the rice thoroughly and cook it in a pot with 300ml of water until tender. Set aside.
- 2. Heat 1 tbsp of oil in a pan and add cumin seeds. Allow them to sizzle for 20 seconds.
- 3. Add finely chopped onion, garlic, and green chili to the pan. Sauté until the onion turns golden brown.
- 4. Stir in the chopped tomato, turmeric powder, red chili powder, and ginger powder. Cook until the tomato softens.
- 5. Mix the cooked rice with the sautéed spice mixture, ensuring it is evenly coated. Season with salt and set aside.
- 6. Crack the eggs into a bowl and whisk them vigorously until frothy. Add chopped coriander, black pepper, and a pinch of salt.
- 7. Heat 2 tbsp of oil in a non-stick pan. Pour half the egg mixture into the pan and spread it evenly.
- 8. Cook the omelette on medium heat for 2-3 minutes until the edges firm up. Flip gently and cook for another 2 minutes.
- 9. Repeat with the remaining egg mixture to make the second omelette.
- 10. Plate the spiced rice alongside the fluffy masala omelette and garnish with extra coriander leaves if desired.
