Ingredients

  • 175 g Sugarcane Cubes (Uss)
  • - Onion-250 Gms
  • 500 g Desi Tomato (Tamatar)
  • 110 g Unpeeled Garlic Cloves
  • loose Ginger
  • 50 g Pluckk Organic Curry Leaves
  • 50 g Black Pepper
  • 100 g Popular Essentials Jeera (Cumin Seeds)
  • 20 g Turmeric Powder
  • 100 g Everest Garam Masala Powder
  • - Red Chilli Powder
  • - Rock Salt
  • - Mooz Butter Garlic & Herbs 125g
  • 1 kg Rice
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )
  • 500 ml Oil (For Frying)

Instructions

  1. 1. Rinse the mutton cubes thoroughly and set them aside to drain in a colander.
  2. 2. Grind garlic, ginger, and whole black pepper into a coarse paste using a mortar and pestle.
  3. 3. Heat vegetable oil in a deep pan, add cumin seeds, and sauté until aromatic.
  4. 4. Add finely sliced onions and curry leaves; cook until the onions turn golden brown.
  5. 5. Stir in the garlic-ginger-pepper paste and sauté for 2 minutes until fragrant.
  6. 6. Add diced tomatoes, turmeric powder, garam masala, red chili powder, and rock salt; cook until the tomatoes disintegrate into a thick masala base.
  7. 7. Add mutton cubes to the masala, mixing well to coat evenly; cook on medium heat for 5 minutes.
  8. 8. Pour in 200 ml of water, cover, and simmer for 20 minutes or until the mutton is tender and fully cooked.
  9. 9. In another pan, melt Mooz Butter Garlic & Herbs, add washed rice, and sauté for 2 minutes.
  10. 10. Add 200 ml water and a pinch of salt to the rice; cover and cook until rice is fluffy and water is absorbed.
  11. 11. Plate the jeera rice and top it with the flavorful mutton pepper fry.
  12. 12. Garnish with freshly chopped coriander leaves before serving.
