This aromatic egg fried rice, inspired by Malabar flavors, combines fluffy basmati rice with eggs, coconut oil, and a medley of spices for a satisfying dinner.
Ingredients
- 1 kg Basmati Rice
- 6 pcs White Eggs
- - Coconut Oil
- 500 g Onion
- - Tomato Ketchup
- 250g Green Chilli
- loose Ginger
- 100 g Garlic
- 100 g Curry Leaves
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- 100 g Salt
- 1pc Watermelon
- - Coriander Powder
Instructions
- 1. Wash and soak the basmati rice in water for 20 minutes before cooking.
- 2. Boil the rice with 400 ml water and a pinch of salt until cooked, then fluff with a fork.
- 3. Heat coconut oil in a pan and sauté chopped onions, ginger, garlic, and green chilies until golden.
- 4. Add chopped tomatoes and curry leaves, cooking until the tomatoes soften and form a paste.
- 5. Stir in turmeric, red chili powder, and garam masala, mixing well with the sautéed ingredients.
- 6. Crack the eggs into the pan, scramble them, and cook until they set completely.
- 7. Add the cooked rice into the pan and gently mix it with the egg and spice mixture.
- 8. Adjust salt as needed, ensuring all flavors are evenly distributed.
- 9. Garnish with freshly chopped coriander leaves and serve hot.
