Ingredients
- 6 pcs White Eggs
- - Rice Flour
- 1pc Watermelon
- 250 g Carrot
- 1 piece Yellow Bell Pepper
- 500 g Onion
- 100 g Coriander Leaves
- 50 g Cumin Powder
- - Red Chilli
- 20 g Turmeric Powder
- 200 ml Mustard Oil
- 100 g Salt
Instructions
- 1. In a bowl, mix rice flour, water, and a pinch of salt to make a smooth dough.
- 2. Divide the dough into small balls and roll them into thin rotis using a rolling pin.
- 3. Heat a non-stick pan and cook each roti on both sides until lightly golden. Set aside.
- 4. Crack the eggs into a bowl, add salt and whisk until smooth.
- 5. Heat oil in a pan, pour the beaten eggs, and scramble them until fully cooked.
- 6. Chop carrot, capsicum, and onion into thin strips and sauté them in oil with cumin, chili, and turmeric powder.
- 7. Add the scrambled eggs to the sautéed veggies and cook for 2 minutes, mixing well.
- 8. Place the cooked roti on a flat surface, spread the egg-veggie mixture evenly over it.
- 9. Sprinkle chopped coriander leaves on top for added freshness and flavor.
- 10. Roll the roti tightly with the filling inside to create the kathi roll shape.
- 11. Repeat the process for remaining rotis and filling to prepare all the rolls.
- 12. Serve the egg kathi rolls warm with a side of mint chutney or ketchup.
