Ingredients

  • 6 pcs White Eggs
  • - Rice Flour
  • 1pc Watermelon
  • 250 g Carrot
  • 1 piece Yellow Bell Pepper
  • 500 g Onion
  • 100 g Coriander Leaves
  • 50 g Cumin Powder
  • - Red Chilli
  • 20 g Turmeric Powder
  • 200 ml Mustard Oil
  • 100 g Salt

Instructions

  1. 1. In a bowl, mix rice flour, water, and a pinch of salt to make a smooth dough.
  2. 2. Divide the dough into small balls and roll them into thin rotis using a rolling pin.
  3. 3. Heat a non-stick pan and cook each roti on both sides until lightly golden. Set aside.
  4. 4. Crack the eggs into a bowl, add salt and whisk until smooth.
  5. 5. Heat oil in a pan, pour the beaten eggs, and scramble them until fully cooked.
  6. 6. Chop carrot, capsicum, and onion into thin strips and sauté them in oil with cumin, chili, and turmeric powder.
  7. 7. Add the scrambled eggs to the sautéed veggies and cook for 2 minutes, mixing well.
  8. 8. Place the cooked roti on a flat surface, spread the egg-veggie mixture evenly over it.
  9. 9. Sprinkle chopped coriander leaves on top for added freshness and flavor.
  10. 10. Roll the roti tightly with the filling inside to create the kathi roll shape.
  11. 11. Repeat the process for remaining rotis and filling to prepare all the rolls.
