Ingredients

  • - Foxtail Millet Flour
  • 6 pcs White Eggs
  • 250 g Carrot
  • 500 g Onion
  • - Tomato Ketchup
  • loose Ginger
  • 100 g Garlic
  • 250g Green Chilli
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1pc Watermelon
  • - Coriander Powder

Instructions

  1. 1. Rinse the foxtail millet thoroughly and soak it in water for 20 minutes.
  2. 2. Finely chop the onion, tomato, carrot, green beans, ginger, garlic, and green chili.
  3. 3. Heat the oil in a large pan and add cumin seeds, allowing them to crackle.
  4. 4. Add chopped onion and sauté until golden brown, stirring occasionally.
  5. 5. Mix in the ginger, garlic, and green chili, cooking for 1-2 minutes until fragrant.
  6. 6. Add the chopped tomato and cook until softened, forming a thick base.
  7. 7. Stir in the carrot, green beans, turmeric, coriander powder, and red chili powder, sautéing for 3 minutes.
  8. 8. Drain the millet and add it to the pan along with the required salt, mixing well.
  9. 9. Pour water into the pan and bring it to a boil, then lower the heat and cover with a lid.
  10. 10. Cook for 12-15 minutes until the millet is tender and absorbs the water.
  11. 11. In a separate pan, scramble the eggs lightly with a pinch of salt and set aside.
  12. 12. Once the millet is cooked, gently fold in the scrambled eggs and mix evenly.
  13. 13. Garnish the pilaf with freshly chopped coriander and let it rest for 2 minutes.
