Ingredients
- 25 g Parsley
- 500 g Baby Potato (Chote Batate)
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 400G Freshos Corn Kernels
- 500 g Organically Grown Sweet Potato
- 1 kg Akar Powder Salt
- 100 g Catch Sprinklers - Black Pepper Powder
Instructions
- 1. Peel and dice 1 medium turnip and 1 medium potato. Cook them in boiling water until tender, about 10-12 minutes. Drain and set aside in a bowl.
- 2. Heat 1/4 cup vegetable broth in a skillet over medium heat. Add 1 cup diced onion and 1 cup diced green pepper. Cook for about 4 minutes, stirring occasionally, until softened.
- 3. Add 1 cup corn kernels, the cooked turnip, and potato to the skillet. Sprinkle with 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss everything together to combine.
- 4. Lightly coat a heavy skillet with olive oil spray and transfer the vegetable mixture into it. Spread it out evenly.
- 5. Cover the skillet and cook over medium heat for 5 to 7 minutes, until the bottom is golden and slightly crispy.
