This refreshing and nutrient-packed spinach and vegetable salad is perfect for a healthy dinner. With a creamy yogurt-based dressing and a sprinkle of sunflower seeds, it’s both satisfying and diabetic-friendly.
Ingredients
- 250 g Spinach - Chopped
- 100 g Garlic - Single Clove
- 500 g Carrot
- 2.5 Kg Austin Whole Peeled Tomato
- 3 pcs Cucumber Green
- 125 g Red Bell Pepper
- 1 pack (200 g) Daily Good Sunflower Seeds
- 250 g Zucchini Green
- 1 pc Cabbage Red
- 100 g Milky Mist Greek Yogurt Cup
- 430Ml Hellmanns Mayonnaise Squeeze Real
- 180 g Devavo Dijon Mustard Sauce (Classic French)
Instructions
- 1. In a medium bowl, combine 2/3 cup plain yogurt, 1/3 cup mayonnaise, and 2 teaspoons Dijon mustard. Mix until smooth.
- 2. Add 3 finely chopped green onions and 2 minced garlic cloves to the dressing. Stir well to combine.
- 3. Cover the bowl and refrigerate the dressing for 1 hour to allow the flavors to meld.
- 4. In a large salad bowl, combine 6 cups fresh spinach leaves, 2 1/2 cups sliced zucchini, 2 shredded carrots, 1 cup diced tomato, 2 cups cabbage, 1/2 sliced cucumber, and 1/2 diced red bell pepper. Toss the vegetables together.
- 5. Pour the chilled dressing over the salad and toss gently to coat all the vegetables evenly.
- 6. Sprinkle 1/4 cup sunflower seeds over the top of the salad before serving.
