  3. 3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cups of spinach and sauté briefly until wilted. Remove from heat and set aside.
  4. 4. In the same skillet, heat another 2 tablespoons of olive oil. Add 1/2 cup finely chopped onion and 1/4 cup finely chopped red bell pepper. Sauté for about 5 minutes until tender. Remove from heat.
  5. 5. In a mixing bowl, combine the sautéed spinach, onion, and red pepper with 1 1/2 cups paneer, 3/4 cup part-skim ricotta cheese, and 1 large egg. Mix well and set aside.
  6. 6. In a saucepan, heat 2 tablespoons of olive oil over medium heat. Stir in 1/4 cup almond flour and cook for 1 minute. Gradually whisk in 1 cup unsweetened almond milk and 1 cup coconut milk. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 cup grated Parmesan cheese. Bring to a boil, stirring constantly, and cook until thickened. Remove from heat.
  7. 7. Remove the lasagna noodles from the cold water and pat them dry with paper towels.
