Ingredients
- 100 g Garlic - Single Clove
- 50 g Thai Ginger (Shunti)
- 100 g Celery Stalk
- 500 g Carrot
- 500 g Organically Grown Sweet Potato
- 1 ltr Bertolli Extra Virgin Olive Oil
- 50 g Sakthi Curry Powder
- 1 pc (52 g) On1Y Paprika Powder
- 1 pack (50 g) Tmi Colman Tezpatta Bay Leaves
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 100 g Catch Sprinklers - Black Pepper Powder
- 100 g X 3 Mtr Coriander Powder Combo
- 200 g Hommade Tomato Puree
Instructions
- 1. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add 1 minced garlic clove and sauté until soft, about 5 minutes.
- 2. Stir in 3 minced garlic cloves and 1 teaspoon of freshly grated ginger. Cook for another minute until fragrant.
- 3. Add 3 diced celery sticks, 2 chopped carrots, and 1 diced sweet potato. Stir and cook for about 3 minutes until the vegetables start to soften.
- 4. Mix in 4 tablespoons of curry powder, 1 teaspoon of paprika, and 1 teaspoon of coriander powder. Stir well to coat the vegetables in the spices and cook for 1 minute.
- 5. Add 4 bay leaves, 1 can of tomato puree, 1 cup of rinsed black lentils, and 4 cups of water. Bring the mixture to a boil, then reduce the heat to medium and let it simmer for 30 minutes, or until the lentils and vegetables are tender.
- 6. Remove the bay leaves and season the soup with salt and freshly ground black pepper to taste.
