Ingredients
- 25 g Parsley
- 400 g Pastazara Finely Chopped Tomatoes
- 250 g Spinach - Chopped
- 100 g Garlic - Single Clove
- 500 G Preserved Dried Salted Black Beans
- 500Ml Pietro Coricelli Aceto Balsamic Vinegar
- 180 g Devavo Dijon Mustard Sauce (Classic French)
- 1 ltr Black & Green Extra Virgin Cold Pressed Avocado Oil
Instructions
- 1. Cook 1 cup of black beans according to package directions until firm. Drain and set aside.
- 2. In a small bowl, whisk together 2 tablespoons balsamic vinegar, 1 tablespoon avocado oil, 1 teaspoon Dijon mustard, and 1 minced garlic clove.
- 3. On a cutting board, chop 1/2 cup spinach and 1/4 cup parsley, and dice 3 roma tomatoes.
- 4. In a large bowl, combine the drained black beans, chopped spinach, parsley, and diced tomatoes. Stir gently to allow the heat from the beans to wilt the spinach slightly.
- 5. Drizzle the prepared dressing over the bean mixture and toss until evenly coated.
- 6. Garnish with chopped parsley and serve immediately.
