Ingredients

  • 25 g Parsley
  • 400 g Pastazara Finely Chopped Tomatoes
  • 250 g Spinach - Chopped
  • 100 g Garlic - Single Clove
  • 500 G Preserved Dried Salted Black Beans
  • 500Ml Pietro Coricelli Aceto Balsamic Vinegar
  • 180 g Devavo Dijon Mustard Sauce (Classic French)
  • 1 ltr Black & Green Extra Virgin Cold Pressed Avocado Oil

Instructions

  1. 1. Cook 1 cup of black beans according to package directions until firm. Drain and set aside.
  2. 2. In a small bowl, whisk together 2 tablespoons balsamic vinegar, 1 tablespoon avocado oil, 1 teaspoon Dijon mustard, and 1 minced garlic clove.
  3. 3. On a cutting board, chop 1/2 cup spinach and 1/4 cup parsley, and dice 3 roma tomatoes.
  4. 4. In a large bowl, combine the drained black beans, chopped spinach, parsley, and diced tomatoes. Stir gently to allow the heat from the beans to wilt the spinach slightly.
  5. 5. Drizzle the prepared dressing over the bean mixture and toss until evenly coated.
  6. 6. Garnish with chopped parsley and serve immediately.
